Today's menu:

Lunch was burritos. Homemade refried beans from yesterday's red beans. We used the frozen paratha that you pan fry yourself for tortillas. Tried to make mexican style rice but missed the mark by quite a bit, not enough flavor.

Dinner will be chicken quesadillas Mexican rice again and red beans (pretty much rearranged lunch ingredients).

When I am with the Miss in the jungle village (40 km south of Banyuwangi), I usually have soft eggs and soldiers for breakfast (oeuf a la coque in French).
There is an old, but very nice, Auntie around and every time she sees me delighting myself with that she looks at me in horror "but it not even cooked !

A bit same as first time my Miss saw me eat medium done red meat ...
Guess what I'm having for breakfast tomorrow? ... soft eggs & soldiers, can't wait.
I just hope no one eats the eggs & then puts the empty shells back in the fridge

Lamb shank with couscous, and the adequate sauce.

Ikan jangki tonight, fish has never tasted so good to me, usually around rp35,000 per kilo, just gut em, cut em in half & fry em, falls off the bone, I usually eat the head, tail, everything except the backbone & maybe I'll pass on the eyes, depends. ..... & any apparent arthritis I once had doesn't trouble me now but maybe that's partially to do with the heat here.

Comparatively, fish in Australia is just a way overpriced, tasteless joke.
 
5 am & I just finished cooking up for the day ahead.
(the silly hour is because I fell asleep for a lil nap at 3pm yesterday after our 2nd vax & woke at 11pm.


A dish of bacon & mushrooms cooked & ready for sarnies.
A pan full of carbonara pasta cooked & being eaten as I type ;)
& a huge pot of goulash (that may or may not have had red wine thrown in 😉 ) base cooked & now in slow cooker to melt that meat down a bit for dinner tonight.
Oh & a litre of yoghurt made, & mango to be prepped to go in as flavouring - later
 
Chicken hunters sauce (Poulet sauce chasseur) with mashed potatoes
for diner tonight.
The hunter's sauce was a premiere for me, it takes quite a bit of time but the result was very good

Finally got the stovetop pizza worked out.
Tonight,1 rough interpretation of poutine, 1 mashed potato & gravy, 1 rendang padang ayam

Out of 5 people & despite the appearance the simple mashed potato & gravy won with 3 votes, poutine & rendang padang ayam 1 vote each but there really wasn't much in it.

I haven't had poutine since I worked on a project in Toronto 18 years ago!

We made pizza today, too. Making it again tomorrow as I made 3x as much dough as required.
Could you say a bit more about the "stovetop pizza"? Oven type or cooking methods or ???

We don't have an oven so I've been striving to improve pizza cooked in a large frying pan over a burner on a gas stove.

Cook in a dry pan & dust the crust with flour to stop it sticking

Pre heat the pan & cook both sides of the crust on medium / low for 30 seconds, take it out & brush a thin layer of oil on one side to stop any moisture from the topping soaking in, this is especially important if there are any leftovers

Cook on low with a large spatula under the lid to create a convection effect

Cooking on low helps to ensure the bottom doesn't burn before the top is done, once the top is done it can be turned up a bit if required.

If you want the edge or the whole thing to be browned more you can do away with the lid when it's almost done & use a gas torch in a quick circular motion so as not to burn it. Alternatively, forget the lid altogether & do it all with just the gas torch.

You might be able to use a Dutch oven on the stovetop for pizza as well

No doubt, we've got a dutch oven but it is deeper than it is round & not as big as the frying pan which makes dinner plate size pizzas. The only possible problem I could envisage would be getting the pizza out of the dutch oven but I suppose where there's a will there's a way.

I thought I'd replied to this post but seems to have disappeared

I hadn't heard of poutine up until a couple of weeks ago when I came across poutine pizza which for others is hot chips (french fries), gravy & cheese curds.

In the pizza shown I used fried potato slices instead of chips (easier with less cooking oil required), beef gravy, onion & just normal cheese.

Well, at 68 y old I had to Google this as I had no clue what poutine was....

French fries, cheese and gravy ....😱😱😱😱 strange mix for this old school frog, but at least I learned something !

I believe it originated in Quebec. I am prepared to stand corrected if thats wrong
