Ayam Sebatu , like chewing on an old boot yet the locals here in Java all breed them an serve them at all functions . 99% of them are free range , roam the streets eating all the rubbish . Boil them for 4 hours then throw them in the bin .
Never heard about Ayam Sebatu. Is it type of chicken breed? Or do you mean ayam betutu?
People like ayam kampung because it's lack of fat. It's used in soup to make clearer broth. Many Indonesian don't mind tough chicken meat or dry beef. Either we don't know better or we think it should be like that. 😅 🤣.
In that case (less fat), maybe we should treat it like quail when cooking it?

You said it right. The majority of Indonesian's don't know better, is the answer. I think the people here don't know what a delicious piece of meat is. Just try the Sapi, Babi, Ayam Kampung. Also people here don't know what real cheese, or butter is. Go anywhere to a market, and you will see big tubs of margarine, being used, and people call it butter. And they think cheese comes in a squeeze tube, or single sliced processed cheese. If you order tomato sauce you get ketchup and sugar.
All of this is due to good marketing by corrupt corporations selling this crap. What about good quality cooking oil? all you see here is Bemoli. No one has even heard of Olive oil, or Avocado, safflower, grape seed, or canola, oil. And if they did see it, it would go back to, Oh, that's too expensive, I'm bankrupt mentality. It's no wonder that there is so much Diabetes, and Obesity here. Even in Children. 🤔🙄
 
Actually, I am sure, but I heard that Palm oil is an OK oil to use for cooking. Correct me if I'm wrong. The problem with it is, the MASS deforestation, happening daily on Sumatra, Borneo, Kalimantan.
This a product of nothing other than Greed! It is being done with no regard to the Indigenous people living there, or the Orangutan, Tiger, wild Elephant, The corrupt politicians allowing this to happen, giving the permits is due to destruction, are only thinking of filling their pockets with money now!
The same is happening in the rainforest of Brazil! For cattle ranching. People have to wake up and understand, that rainforest and Oceans produces almost all the Oxygen for the Planet. It is not just some radical Earth first, Global warming topic being promoted by radical people. It is scientists who have studied, and have been warning us for a long time.
We have to make the decision of what is more important. Money now, or a clean, livable, Planet later! 🙏❤️✌️

The VAST majority of people in Indonesia are on very low budgets.
Food is not a priority for them, just about feeding oneselve. Their food (can't call it "cuisine") is way behind Thai, Chinese, Vietnamese, Korean or Japanese.
1L of the crap oil they use cost 20 / 25 K per Liter. My olive oil, Bertolino, is 160 / 170 K for 500 ml ! Anyway for the way they cook stuff, it would be a waste.
Palm oil is definitively not healthy.
At home the Missus uses the local oil for her stuff, but butter and olive oil for proper cuisine. And she has learned the difference in taste...
 
It is not very wise to judge something only from one point of view and then used as absolute truth or standard.
Each regional or country has its own characteristics including food developed from local nature products for local tastes.
Steak is not an Indonesian menu because local beef is not suitable. Therefore, Padang people process it by make rendang. Javanese people cook delicious and tender "empal" and also savory "semur" all basically use the slow cook or multi-step cooking concept.
Cheese is also generally not a native Indonesian food in general, although there are several provinces that have native foods such as cheese, but it would not be wise to benchmark it against Italian cheese, for example.
Processed cheese is also not developed in Indonesia (it's not too difficult to find out where processed cheese comes from); but because the price is cheaper. it is more durable and the taste is more customized so many people like it.
It is very unwise to cook steak from local beef or free-range chicken.
It's the same as cooking rendang from Wagyu beef.
Lombok people will not want to cook taliwang chicken from broiler chicken.
Is it smart for Indonesians to use olive oil or sunflower or avocado oil, especially for frying crackers?

Of course you can choose something that more suitable for your top quality high end product , but be prepared to spend more as the demand is less.
 
Pork blanquette. Slowly cooked (1 1/2 h) in wine / chicken stock with carrots, celery, onion, cloves, bay leaves and a bouquet garni. After a good hour add the mushroom and cream (200 ml), season with pepper and (french) mustard.
Sauce was OK, but we have done better. We gave it a 7/10

Served with remaining Basmati rice.

I do like ayam kampung - ayam taliwang ayam betutu is my favorite chicken dishes.
I like KFC too - another favorite food, have always visited KFC outlet every time I visit other countries while my (L) mum took more than 10 years to accept KFC as edible dishes.

Makes me smile when Americans or Aussies comment other countries food, when theirs is mainly based on junk food...

My daughter who lived in Ohio really hates when I diverted our travel route to Cincinnati north Kentucky area just to eat at KFC in Kentucky. It could be due to France influence :ROFLMAO:as she lived 6 years there before moved to US . but hey - who is the boss?

When we lived in France with 3 kids, I had more than my share of Mc Do and KFC.
Including birthday parties.
Later living back in Thailand, when M.I.L. or ex wife suggested birthday at the temple, I asked the kids "what about Mc Donalds ?" 🤣🤣🤣
Guess their answer.....
Besides that, they were 100% brought up "French cuisine", my ex having lived and studied in France and an excellent cook.
Way better than me ....

I, like probably many others probably in this forum, have a lot of Indonesian friends who are well versed in what healthy food is. But they also have much more financial means than the average Indonesian.

Yes I understand the dilemma of financial aspect of what foods people can afford. I did say it is probably an OK oil to use Health wise. The point I was trying to make is the large scale destruction of the rain forest to grow more and more Palm plantations. It has to be controlled more now!
Eating healthy is a World wide problem. It should be a part of the curriculum in Schools.
We waste so much money on elections, wars, flying to Mars, when this money should be spent on taking care of all people, everywhere.

Everyone of the products you mentioned are in stores or on line so evidently someone is buying them and not just the limited amount of Western expats here.
 
Yes, something which is unheard of in the US and now, Europe.
Let's not forget that Indonesia diabetes is a money maker for doctors. All someone needs is a single blood sugar test that shows elevated when they didn't even fast for it and bam, you have diabetes and you need this and that plus seeing me regularly. One of the test, like cholesterol that can change from hour to hour.

Yes but you didn't say anything about all the imitation food. And the lack of knowledge about what is the difference. Isn't it time now, since everyone has smart phones, motorbikes, big cars, television, to finally get out of the we only eat what our parents ate mentality.
Hormone fed big chickens, and white rice, everyday is boring and not very nutritious. It seems to be the mindset here, and there you see one of the downfalls of tradition.
And the point about doctors making profit from sick people, is criminal!

I remember doing something similar to hit a KFC in Kentucky when I drove all around the US in ‘87 or ‘88. That KFC had one or two AYCE eat nights at the restaurant. Never seen that at any KFC worldwide.
 
I’ve been on a pork belly binge the last 3-4 months. Had some decent pork belly at a local chinese restaurant, but it was fairly pricey. A full portion (advertised as 250gr) was 170k or so.

One time a few months back, I got the container, and it was only 2/3 full, instead of full, like normal. I had the wife weigh it, and it was only 180 or so grams. She texted them, they apologized, and delivered some more.

Two weeks later, the same thing happened. This time, after a day, they said that it was a precooked weight. I thought this strange, as the container had always been full during the last 5 years I’ve been ordering it.

So, now I searched for a good source of raw pork belly here in Bandung. Found DNA Pork, which had nice pork belly for 130k a kg. My wife has gotten pretty good at preparing it.

Here is a pic of some delicious large pork ribs we had last night.
