Hi Folks,
Looking for a food quality consumer quantity of Xanthan Gum. It's around in the online stores but the listings seem mostly vague on origin and selling in homemade bags - I suspect they are using kalzan/barazan etc lifted from a drilling rig. (perhaps)
I've checked Pantry Magic, Titan, the little baking toko across from Toko Dewi/Tian Liong and it's been zero sum.
Has anyone baked or used it with success from a supplier they trust?
Thanks - this has been on my Hard-to-find list for years which also includes horseradish root, live cold water oysters and free beer.

Just curious - what do you use it for? I use it as an ice cream stabilizer and it is awesome (also hilarious if you use too much -- anybody want some caramel-ice-cream-flavored chewing gum?)

Thanks El-Grotto!
Ms. Puspawarna - I have a sauce that if I reduce any farther tastes salty - never used xanthan gum before but I've been wanting to get a chance to "play" with it for years (plus Liquid N2). Have you visited http://icecreamscience.com ? Apparently all the big wheels at egullet respect his authority.
Cheers!
