I keep a ridiculous supply of spices, herbs, and blends on hand, and I take excellent care of them: they live well-sealed in the freezer when not in use, and if they don't smell pungent to me anymore, I toss them. I tend to buy my spices from Penzey's, though my collection comes from a range of sources - travel/spice markets, departing friends who gave me their stuff, ordinary grocery stores, etc.

I'm actually taking some of it back to Hawaii with me (it would cost hundreds of dollars to start fresh and buy everything I like to keep on hand), but that still leaves an amazing amount of stuff. My staff would be clueless regarding what to do with most of it, and I hate to just throw it out, so I'm giving it all away. PM me to arrange a time to pick up any or all of it. Here's a list of what I've got (okay, kava isn't a flavoring - but I store it with my spices and I'm giving it away too):

Just wow. Your house on occasion must be delightfully aromatic.

Truer words were never spoken. Now that all the spices are thawed, it smells like an Indian grocery in my house. It's a bit overpowering, actually. Somebody help!

I'll be looking for something to make a cheese and pickle sandwich if I can find any decent cheese
 
Hey can you post your papaya chutney recipe?

Unfortunately it's in a box in the port in Honolulu right now. The recipe is a little weird - I created it when I saw a mango chutney I wanted to make, but I didn't have mango, so I started with papaya. Then I didn't have enough of most of the ingredients, so I used what I had and substituted something similar for the rest.

As a result, the recipe uses papayas, bananas, raisins, brown sugar, white sugar, lemon juice, vinegar, cinnamon, cloves, allspice, and I forget what all else - but there are A LOT of ingredients. It could probably be simplified, but it was so delicious the first time I made it that I quickly wrote down what I had done before I forgot, and I've been making it the same way for decades. (It makes a lot and freezes well, so I don't mind the bother.)

Anyway, I'm putting "post chutney recipe" on my Things To Do list for Hawaii, so in 5-6 weeks I should be able to post it.
